Roasted Chili Lime Chickpeas
This is a quick and easy snack to throw together and a pretty good source of protein and fiber as well! I love the crunch and tang of these. They really are quite satisfying! I came across this recipe on MyFitnessPal app that I have been using for the past couple of months to log my foods that I have been eating. It is loaded with already done for you foods that make it really easy to track your calorie intake. It also pairs nicely with my Garmin watch that I got this summer 🙂

Crunchy and tangy snack that has a little zip as well!
- Total Time: 45 minutes
Ingredients
- 2 cans chickpeas, rinsed and drained well
- 2 TBL olive oil
- 4 tsp chili powder
- zest of one lime
- 1 tsp salt
Instructions
Preheat oven to 400 degrees. After rinsing and draining the chickpeas, pat them dry with a paper towel. Toss them in a bowl and add the rest of the ingredients. Stir to coat. Place in a nonstick baking pan, making sure they have room and aren’t on top of each other. Cook for 30-45 minutes.
Notes
I used my convection setting on my oven and I feel like they should be cooked a little bit longer so I would suggest going with the longer duration on the time (45 minutes) so they aren’t soggy. You want these to be crunchy!
