Fruit and Kefir Smoothie
So, Summer finally arrives here and what happens? Our air conditioner decides it’s time to be done. We noticed it last night while we were sitting at the dinner table and were breaking a sweat. I guess our dog, Shafer, was trying to tell me something when he was being lazy all day! By the time we had noticed, it was 81 degrees in our house and it was still 88 degrees outside at 8:15 pm! Time to get the fan out (which Shafer LOVES!)
On to this morning…I took the dogs out for their morning walk and was going to do my workout when I got back, but decided to water all my outside plants instead (I burned 259 calories on our walk, so that and the heat in our house was my justification for today!). When I came in I decided to make a new favorite smoothie of mine. This one took me a few tries before I was convinced, but I really enjoyed it today. I recently saw a post about incorporating Kefir into your diet and I was intrigued. Anything to get me some probiotics in my system!
The ingredients are simple. I choose to use 1% Kefir because the whole milk one was a bit too much for me…especially being one that does not drink milk. You really can use any types of fruit you have on hand. Today I used fresh banana and blueberries and some frozen tropical mixed fruit. I add just a dash of vanilla extract to take away some of the bite of the Kefir and I top it with a favorite…PEANUT BUTTER! I love peanut butter.
Ingredients:
- 1/2 frozen or fresh banana
- 1/2 cup frozen and/or fresh fruit of choice
- 1 tsp vanilla extract
- 1 heaping tablespoon all natural peanut butter (or almond butter, yum!)
- 1 cup Kefir (I use Lifeway 1%)
- a couple of ice cubes
Throw all in a blender and you are good to go! Even Shafer approved of this one!
