Veggie and Egg Breakfast Muffins

Now that school is back in session, I thought I’d share an easy breakfast option for you and/or the kids that is satisfying and quick to prepare. This recipe is also very customizable to your family’s tastes. You can pretty much use whatever veggie you like as well as whatever cheese you prefer. If you want to add some cooked, chopped bacon or sausage, go for it! I’ll give you the basics and you can roll with it 🙂

First, you will want to get out your muffin pan and make sure you spray it liberally with spray oil so your muffins don’t stick. I haven’t tried using muffin papers, but I don’t think they would work very well. If you do try it and they work, please let me know! I’m just afraid of the sticking issue. Pre-heat your oven to 375.

Next, take whatever vegetables you want to use and dice them up into little pieces. I used broccoli, red pepper and some yellow onion. Chopped spinach would be a great addition in my opinion as well. Once they are all diced up, mix them together and then put in your muffin pan, dispersing evenly into each cup.

In a small bowl, add 8 whole eggs and 1/4 cup almond milk (or milk of your choice) and whisk together. You’ll want to add in any herbs or spices you want to use at this time as well. I threw in some garlic powder, dried basil, crushed red pepper and a little salt and black pepper. Fresh herbs would also be a nice addition if you had some on hand. Once you have whisked this all together, pour evenly into each veggie filled cup.

Top each muffic cup with a dash of your favorite shredded cheese. For these I used what I had in my fridge and that was a Mexican blend. It’s nice to add the cheese to the top because it will brown just a bit while they are baking.

Lastly, you will pop these into the pre-heated oven at 375 degrees for about 20 minutes. They will keep in a sealed container in the fridge for a few days so they are perfect for some easy to-go breakfasts for those busy mornings!
