Pesto Pizza with Beyond Meat Sausage and Heirloom Tomatoes
So, my plan was to have this post out, or at least some type of pizza post out for Pizza Friday, but life got away from me this week. This was the pizza we made last night and it really turned out quite delicious! I was craving a pizza with some pesto and this is what came together. I picked up some Beyond Meat Hot Italian Sausages, a fresh heirloom tomato and some baby arugula and this is what I came up with!
We love the Beyond Meat sausages, but if you wanted to use a different type of sausage you totally could. These actually worked very well for this recipe. Our pizzas tend to be a bit smaller so we only used one, but depending on the size of your crust and/or how much sausage you want, feel free to add more. I sliced mine up into small coin pieces and sauteed them in a pan for a short while. These do not take long to cook and you do not want to overcook them. I did about 1 1/2 minutes per side and that was fine. Plus, they will cook a bit more in the oven once they are on the pizza.
After cooking the crust for a bit I took it out of the oven and spread pesto over the entire crust (I love getting it all the way to the edges!). Normally I would make my own pesto, but I had a jar on hand and I took the easy route. I will definitely share my recipe for pesto once I have some in season basil to use!
Next, top it with the sausages, followed by some thinly sliced tomato. I happened to come across a beautiful heirloom tomato at the store and that is what I chose for this pizza. Top all that with your choose of cheese (I used some fresh grated parmesan and mozzeralla) and then pop it in the oven and cook until the crust looks a nice light brown.
When it looks to be almost done, add the baby arugula and pop it back in for a minute until the arugula is just barely wilted. Drizzle with a bit of truffle oil before serving and there you go!
