Maple Syrup Corn Bread
It was fall football Sunday in our house and we decided to make some chili for dinner. I just can’t make chili without cornbread so I took a look at the recipe that I usually went with and decided to change things up a bit. I was very happy with the results! A super maple flavored cornbread that was not dry at all!

Easy and delicious with a slight maple syrup flavor that goes really well with a cozy bowl of chili.

Ingredients
- 3/4 cup yellow corn meal
- 1 1/4 cup all purpose flour
- 1/2 cup pure maple syrup
- 1 TBL baking powder
- 1/2 tsp salt
- 1/4 cup unsweetened applesauce
- 2 TBL melted butter
- 2 eggs, beaten
- 1 cup almond milk
- 1–2 TBL honey, optional
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, combine all of the dry ingredients. In a smaller mixing bowl, whisk together the eggs, applesauce, butter and milk (and honey if you are adding). Add the wet ingredients to the dry ingredients and mix just until combined.
Pour batter into a 8×8 inch baking dish that has been sprayed with cooking spray and bake for 25 minutes, or until the top browns and you can stick a toothpick in the center and it comes out clean.
