Italian Zucchini Boats
OK, even though this recipe does not photograph well, it is so easy and so good! Perfect for those of you, like me, who have more than enough zucchini growing in your backyard and for those who just love zucchini (also like me!).

Ingredients
- 1 medium zucchini
- 1 spicy italian chicken sausage, casing removed
- 1/2 small yellow pepper, diced
- 1/3 yellow onion, diced
- 1 cup of your favorite pasta sauce, plus more if needed
- 1/3 cup of shredded italian cheese
Instructions
Preheat oven to 375 degrees. Slice the zucchini lengthwise and scoop out the seeds and place into a lightly greased glass baking dish.
Heat a skillet over medium heat and add the chicken sausage, breaking it into crumbles. Once the meat is all crumbled, add the pepper and onion and continue to saute until sausage is cooked and pepper and onion are soft.
Add the pasta sauce and heat through.
Scoop the mixture into the two zucchini boats and then sprinkle with cheese. Place in the heated oven for approximately 15-20 minutes or until the zucchini gets to your desired tenderness.
Notes
Depending on the size of your zucchini, this can either be a main dish or served as a side. Mine was plenty filling on its own. You can throw in other veggies as well. If you don’t like spice, use mild italian sausage, or ground turkey or chicken spiced up the way you like it. Make your own sauce and add some fresh herbs. This recipe is very versatile!
