Healthy Breakfast Cookies
Just recently I was looking at my memories on Facebook that pop up each day and I came across a recipe for breakfast cookies that I had saved, but can no longer find the link for. I knew I had some bananas that needed to be used up and I had everything else I needed to make these super easy and tasty breakfast cookies! I’m trying to get back into my routine of having smoothies in the mornings, but sometimes I want just a little bit extra and these cookies fit that need (or want, actually!).
This is a recipe that you can be flexible with. If you feel your cookies need more oats, then add more to thicken them up a bit. Here is what I used in this batch and I was very pleased with how they turned out.
First, preheat your oven to 350 degrees.
- 3 medium ripe bananas
- 1 cup unsweetened applesauce
- 2 cups oats
- 1/2 cup or more dried cranberries
- dash of cinnamon
Mash the bananas in a bowl. Add the rest of the ingredients and combine well. Drop by tablespoonful onto a parchment lined baking sheet. Bake at 350 for 30-35 minutes. My batch made about 24 cookies. Let cool and then store in an airtight container. I put mine in the refrigerator to make sure they stay fresh. Enjoy!
