Crock Pot Stuffed Pepper Soup
I had a craving for some comfort food last week, but also wanted to keep it healthy and I came across a version of this recipe. It sounded quite simple and plain, but it turned out to be delicious and ever so easy to make. The best part about this is that you most likely have most of the ingredients already at home in your own kitchen. 🙂

Ingredients
- 1 lb ground turkey (you could also use ground chicken or ground beef if you’d prefer)
- 1 cup diced yellow onion
- 14.5 oz can diced fire roasted tomatoes (I prefer fire roasted because of the boost in flavor, but any diced tomatoes will work)
- 15 oz can tomato sauce
- 3–4 bell peppers, chopped (I used orange, yellow and red)
- 2 cups low sodium vegetable or chicken broth
- 1/2 cup dry long grain brown rice
- 2 gloves minced garlic
- 2 tsp dried oregano
- 1 tsp dried basil
- 1–2 tsp crushed red pepper (leave this out if you don’t like it spicy)
- 1/4 tsp black pepper
Instructions
Brown the ground turkey in a medium skillet, adding dry spices as it cooks. You can be creative with your spices here. Add more crushed red pepper if you like the kick, or less if you don’t. Toss in other herbs if you’d like as well. Once browned, add to the crock pot. Next, add the remaining ingredients, except for the rice. Cover and cook on low for 6-8 hours. I added the rice to mine about an hour and a half before it was done cooking. You could also throw in cooked rice at the very end.
Notes
If you are doing the 21 Day Fix meal plan, this would count as 1 red, 1 1/4 green, and 1 yellow per two cup serving.
